The Dexter Russell (3576) Skinning knife is one of the best skinning knives in the world. No matter what you are looking to skin, Drum, Trout, Bass, Striper – actually any fish, deer, pig, chicken, turkey – actually, any animal, this is the knife to buy. This skinning knife is very easy to use because of the curve of the blade and the rigidity of the steel. With very little wrist action, this knife cuts with nearly no effort and does not cause tiring, like many other skinning knives do.  Another excellent quality is the edge – this knife will hold an edge for a very long time and is very easy t0 sharpen when it’s due.   We have customers that write us about their grandparents using the Dexter skinning knives and would never use another – quite a testimony. “This knife is an old style butchers' skinning knife constructed with a carbon steel blade and full tang. The tang is 1/4" thick while the blade itself is about 3/16" along the spine with a straight taper to the cutting edge. The blade is almost completely rigid and steeply curved, as you can see from the picture. The blade is short enough to be maneuverable in tight spaces, and because of the curve you're able to cut simply by turning your wrist, rather than moving your whole arm to slice as with a straight blade. The steel is of high quality so I've had no trouble maintaining the edge so far. Be aware if you purchase this that the steel is not stainless, you have to clean it and dry it off immediately when you're done with it. It is a fantastic skinning knife. Fish, pigs, chickens, deer, this knife has done an exceptional job on all of them.”

 

“After watching Capt Russo's YouTube video on filleting redfish, I picked this up. After putting a good edge on it (it is not that sharp as shipped), I put it to the test on a big red. It works so much better that the skinny filleting knives. You can put your finger on the edge and use the curved part of the knife to gently do the work with significantly more precision and greater ease. It is so good that I gave one to my fishing buddy.”

 

“This Dexter-Russell Skinning Knife, is a perfect knife for fleshing out a deer, small game, Speckled Trout or Red Drum. Keep it sharp and just let it do the work with little push or effort. Much prefer it to a filet knife, as it's size if right for working fish, the size you keep for eating. Slide it along the rib bones and the filet just comes so easily compared to a filet knife.”

 

 

Dexter has dis-continued the 3576, this knife is the same blade with the High carbon Stain-free steel and SaniSafe handle. This knife is NFS certified.
